Away from light. Away from steam. Away from the stove. Good spice storage is not complicated — it is a small ritual that keeps aroma where it belongs: inside the jar, waiting for the pan.
Spices rarely spoil overnight. They fade. Colour dulls, aroma weakens, flavour flattens. Storage decides how fast.
The four enemies
Bleaches natural pigment and weakens the delicate aromatic compounds underneath.
Essential oils dissipate faster the warmer the jar sits.
Causes caking, and can encourage mould or microbial growth.
Every minute the lid is open, a little more of the smell leaves.
Beside the stove. Heat rises from the burners, steam escapes from pots, and oil and moisture hang in the surrounding air. A jar opened over a simmering pan absorbs warm vapour almost immediately. Convenience should not cost the ingredient its character.
Five habits that do the work
- Store in a cool cabinet or drawer, away from the cooking area entirely.
- Use airtight, food-safe containers. Glass does not absorb aroma but needs to be kept out of light; opaque jars are better for turmeric, chilli and saffron.
- Close the lid immediately. A loose lid seems harmless. Aroma escapes quietly.
- Only ever a dry spoon. Moisture is most damaging to powders.
- Measure away from the pan. Never shake a jar over a steaming pot — rising steam gets into the container.

Questions
Should spices go in the fridge?
No. Moving a jar in and out creates condensation inside it, which is the one thing you are trying to avoid.
How long do spices keep?
Whole spices hold their character considerably longer than ground. Ground turmeric keeps its colour and aroma best within about 12 months of the packing date printed on the pack.
Do clear glass jars ruin spices?
Only if they sit in the light. Glass is excellent — it just belongs inside a cupboard rather than on a sunny shelf.
